The outdoorsman and survival expert concludes the series in which he explores the more remote areas of France, observing the local flora and fauna. Ray heads to the rugged west coast of Brittany, where he goes out by boat to discover the nearby islands. On his journey, he gets up close to bottlenose dolphins, meets a seal colony and learns about the work of seaweed fishermen before heading back to land. By the rocks, he discovers a family of peregrines who have built their nest dangerously close to land and meets Joel, a local specialist who takes him down to the beach to look for shellfish and learn about Brittany's high tides.

The hills of Provence are famous for their ancient olive groves and lavender fields, but this is also where a special scrubland known as the Maquis or the Garrigue is found. On the limestone outcrops, prickly juniper, scattered pines and dry-habitat aromatic herbs carpet the hillsides. Ray explores this classic Provence landscape, visiting the beautiful ochre canyons, and descends into the gorge to look for the rare Bonelli's eagle. He also uses his tracking skills to find a family of wild boar.

Ray visits The Cevennes National Park in southern France. He travels deep into the chestnut forest to meet Laurent, a local farmer whose family have grown chestnut trees for generations. He sets up a campfire to brew a chestnut soup. He continues his journey, meeting a local beekeeper who builds traditional hives from tree trunks before heading off to find an animal once common to this area, the wolf. Living beside the wolves are vultures, who have been successfully reintroduced to the park.

He then journeys down the Ardeche river by canoe. He meets local wildlife ranger Olivier, who shows him a viperine snake and demonstrates some of the traditional uses of local plants.
